Can I avoid to have my username appear in a shared match's details, so that it's not visible outside of the group I'm in?

Yes.

Your username is the only piece of information about you which is shared via match sharing (Hill's Fairs - 7 Wonders match example) and group sharing (Hill's Fairs - public group example), but you can hide it from view by selecting/deselecting the appropriate option. Moreover, geolocation data are always hidden in the match's details.
